Loaded Breakfast Biscuits
These loaded breakfast biscuits are one of those easy recipes I like to make ahead for busy mornings. I make them in a jumbo muffin pan with flaky biscuits, seasoned eggs, shredded cheese, and whatever breakfast meat we have on hand. Sausage, bacon, ham, or a mix all work.
Once they are baked and completely cooled, I wrap them individually in parchment paper and keep them in the refrigerator. In the morning, we can grab one and give it a quick warm-up in the microwave.

What You Need
The filling is flexible, which is one of the reasons I like this recipe. One 8-count can makes 6 jumbo breakfast biscuits, so you’ll have 2 biscuits left over to bake separately according to the package directions. For one batch I use:
- 1 can flaky-layer biscuits, 8-count
- 5 large eggs, beaten and seasoned with salt and pepper — reserve a small amount for brushing the biscuit tops
- Shredded cheese, to taste
- Cooked breakfast sausage, chopped ham, cooked bacon, or a combination, to taste
- Cooking spray

Use a Jumbo Muffin Pan
This recipe is made in a jumbo 6-cup muffin pan, not a standard muffin pan. Grease the pan well before assembling the biscuits. Split 6 flaky biscuits in half horizontally and press one half into the bottom of each muffin cup.

Layer the Filling
After the bottom biscuit layer is in place, I add the fillings in this order. Season the 5 beaten eggs with salt and pepper before adding them. The exact amount of meat and cheese is really up to you — I use enough to make them hearty without packing the cups too full. One thing to watch: the bottom biscuit will rise while baking, so keep the top biscuit roughly level with the top of the jumbo muffin cup before baking. If the cups are overfilled, the filling can push out as the biscuits rise.

Top and Bake
Once the top biscuit halves are in place, brush them lightly with the reserved beaten egg. Bake at 375°F for 15–17 minutes, until the biscuit tops are golden and the eggs are cooked through. Let the breakfast biscuits cool before removing them from the pan.

Make-Ahead Breakfast
I let the breakfast biscuits cool completely before storing them. Once cool, I wrap each one individually in parchment paper and keep them in the refrigerator. For breakfast, we unwrap one and give it a quick warm-up in the microwave. They are especially handy on school mornings or any morning when making breakfast from scratch is not happening — the same reason I keep our overnight sausage breakfast casserole in the rotation.

Easy Ways to Change Them Up

- 2Beat the 5 eggs with salt and pepper. Reserve a small amount for brushing the biscuit tops.
- 3Split 6 flaky-layer biscuits in half horizontally and press one half into the bottom of each muffin cup.
- 4Layer cooked breakfast meat, shredded cheese, some of the beaten egg mixture, then a little more meat and cheese.
- 5Place the remaining biscuit halves on top. Keep the tops roughly level with the rim of the muffin cups because the bottom biscuits will rise while baking. Do not overfill.
- 6Brush the biscuit tops lightly with the reserved beaten egg.
- 7Bake at 375°F for 15–17 minutes, until the biscuits are golden and the eggs are cooked through.
- 8Cool before removing from the pan, then cool completely before wrapping and refrigerating.
Storage & Reheating
Wrap individually in parchment paper and refrigerate. To serve, unwrap and warm briefly in the microwave until heated through.
Helpful Tips
Keep the top biscuit level with the rim of the cup so the filling does not push out as the bottom biscuit rises.
Cool the breakfast biscuits completely before wrapping so the parchment does not trap steam.
