Honey Cinnamon Walnut Granola
This is the kind of granola I like to keep around for yogurt bowls and quick breakfasts. It is a small, simple batch made with old-fashioned oats, walnuts, sliced almonds, flaxseed, cinnamon, honey, and vanilla. It is lightly sweet rather than dessert-sweet, and the nuts and seeds give it plenty of texture. We usually use about 1/3 cup over Greek yogurt with fruit or homemade peach topping.
One thing to remember with homemade granola is that it will still feel a little soft when it first comes out of the oven. Let it cool completely before deciding it needs more time. That is when it crisps and the clusters finish setting.

Why I Like This Granola
It is a small batch that comes together quickly with simple pantry ingredients. Honey provides the sweetness, while walnuts, almonds, flaxseed, and optional chia add plenty of texture. It works for yogurt bowls, breakfast, or a small snack, and it is a simple homemade option when I do not want an overly sweet packaged granola.
Honey Cinnamon Walnut Granola Ingredients
You need 2 cups old-fashioned rolled oats, 1/2 cup chopped walnuts, 1/3 cup sliced almonds, 2 Tbsp ground flaxseed, 1 Tbsp chia seeds (optional), 1 tsp cinnamon, 1/4 tsp salt, 3 Tbsp honey, 2 Tbsp melted butter or avocado oil, and 1 tsp vanilla extract.

How to Make Honey Cinnamon Walnut Granola
Heat the oven to 325°F and line a baking sheet with parchment paper. Combine the oats, walnuts, sliced almonds, ground flaxseed, optional chia seeds, cinnamon, and salt. Stir together the honey, melted butter or avocado oil, and vanilla, then pour the wet mixture over the oat mixture and stir until everything is evenly coated. Spread the granola evenly over the prepared baking sheet, pressing it down lightly if you want more clusters. Bake for 20–25 minutes, gently stirring once at about the 12-minute mark, and remove it when lightly golden. Let it cool completely on the baking sheet before breaking it into clusters, then transfer to an airtight container.

How to Get Better Granola Clusters
Lightly press the granola into the baking sheet before baking to help clusters form. Avoid stirring it repeatedly. After baking, leave it alone until it is completely cool before breaking it apart.

Do Not Overbake It
Granola crisps more as it cools. It may still feel slightly soft when it first comes out of the oven, so do not continue baking it until it feels completely crisp. Doing that can make it too dark and dry.
How We Use It
Our usual serving is about 1/3 cup over Greek yogurt with berries, sliced fruit, or homemade peach topping. It is also good for yogurt bowls, with fresh fruit, for quick breakfasts, or as a small handful for a snack.
Storage
Once completely cool, store the granola in an airtight container at room temperature. For best texture and freshness, use within about 1–2 weeks.
